My GO-TO Power Breakfast

Breakfast is the most important meal of the day – and fortunately my favorite! It should also be your biggest meal of the day to jump-start your metabolism. This is my go-to power breakfast that’s packed with protein.

Almond flour pancakes made from scratch. (did I mention I LOVE pancakes?) – 1 cup of almond flour, 2 eggs, 1/3 cup of almond milk, 1 teaspoon of olive oil, 1 teaspoon of vanilla extract, 1/2 teaspoon of baking powder, and 1/4 spoon of salt. (Try adding cinnamon, walnuts, pecans, almonds, bananas, or blueberries.)

100% pure maple syrup (not that sugary corn syrup stuff).

Chicken breast tenders (yes, chicken for breakfast!).

Whole egg scramble (yes, the whole egg. The yolk is where all the nutrients and good fats are) with tri-color sweet peppers, onions, and spinach.

Water (or coffee if I haven’t already had my cup for the day and most fruit juices are concentrated sugar without the beneficial fiber of the whole fruit.)

PS. No butter. Even on the pancakes. Everything is cooked with olive oil cooking spray.
